Recipe | Organic Gummy Bears (Low Carb, Sugar Free)

Ingredients:

  • 1 cup fresh organic berries. I used strawberries.

  • 3 tbsp water

  • 1-2 tbsp Swerve, Monkfruit or Coconut sugar depending on how sweet you’d like the gummies. I used Swerve.

  • 3 tbsp organic unflavored gelatin

Directions:

  1. Toss your cup of berries with 1-2 tbsp sugar replacement & place in a closed container in the fridge. Let sit for 1 hour.

  2. Add all ingredients except gelatin into blender & mix on high until the fruit puree is smooth. Pour puree into a small saucepan.

  3. Sprinkle gelatin in, one tbsp at a time, whisking after each one so that the gelatin does not clump. Bring mixture to a low heat and stir constantly until gelatin is completely dissolved. When gelatin is completely dissolved & mixture is smooth, turn off heat.

  4. Use an eyedropper tool to put the puree mixture into each individual bear mold. Place into the fridge to set, ready in about 15 minutes.

    For firmer gummies, eat straight out of the fridge. For softer gummies, let them reach room temp. Store uneaten gummies in fridge.

  5. Enjoy!


I’ve found tons of homemade gummy bear recipes across the internet, but never any that were low carb, organic, made out of just a fruit puree, etc. I adapted a few recipes to create these & I’m super happy with the results! They of course will not taste as syrupy-sweet as your favorite gummy in the candy aisle, but I’d rather eat these any day.
